Still Making Ugly Spring Rolls? Use Pre-shaped Vietnamese Noodles to Fix that.
Fresh Vietnamese spring rolls made easy with pre-shaped bánh hỏi noodles, offering a neat and simple way to create perfectly filled rolls without the mess of traditional vermicelli.
Ingredients
- 1 package (approx. 8 oz) Bánh Hỏi (Vietnamese pre-shaped rice noodles)
- 8-12 sheets of rice paper wrappers
- 1 cup warm water (for hydrating bánh hỏi)
- 1 cup hot water (for softening rice paper)
- Assorted fillings: cooked shrimp, thinly sliced cooked pork, fresh herbs (mint, basil, cilantro), lettuce leaves, cucumber sticks, julienned carrots
Instructions
- 1
Gently separate the bánh hỏi noodles into individual portions or rectangles as they come packaged.
- 2
Submerge the bánh hỏi portions in a bowl of warm water for about 1 minute to soften them. Drain well.
- 3
Dip one sheet of rice paper into the hot water for about 15-30 seconds, or until pliable. Remove from water and lay flat on a clean surface.
- 4
Arrange your desired fillings on the lower third of the softened rice paper. Start with a lettuce leaf, then add a portion of bánh hỏi, followed by your protein (shrimp, pork), and fresh herbs and vegetables.
- 5
Fold the bottom edge of the rice paper over the filling. Then, fold in the sides, and tightly roll the spring roll upwards to the top edge.
- 6
Repeat with remaining rice paper and fillings. Serve immediately with your favorite dipping sauce.

Pro Tips
- •Don't over-hydrate the bánh hỏi; they should be pliable but not mushy.
- •Ensure your fillings are pre-cooked and cut into manageable sizes to make rolling easier.
- •Work with one rice paper wrapper at a time to prevent them from drying out or sticking together.
- •If the rice paper tears, don't worry, you can often still salvage the roll by patching it or folding it carefully.
- •Have all your fillings prepped and within reach before you start rolling for a smooth assembly process.
Variations
- •For a vegetarian version, use marinated and pan-fried tofu or tempeh as the protein.
- •Add thinly sliced avocado for extra creaminess.
- •Include thinly sliced mango or pineapple for a sweet and tangy contrast.
- •Experiment with different herbs like Thai basil or perilla leaves for unique flavor profiles.
