My Picky Kindergarteners Went Crazy for This 10-Minute Dessert
A quick and easy 10-minute vegan coconut sago pudding, perfect for kids and a healthier alternative to processed snacks. This gluten-free and lactose-free dessert is a delightful treat that even picky eaters will enjoy.
Ingredients
- 1/4 cup small tapioca pearls (sago)
- 1 can coconut milk
- 1 cup water
- 1/4 cup condensed milk
- 1 vanilla bean, split in half. seeds scraped
- how to cook tapioca pearls (pasta method)
- add tapioca pearls to boiling water (at least 4 cups water). cook for 8 mins, adjust heat to have gentle boil
- Drain the cooked tapioca pearls immediately in a fine-mesh sieve and rinse thoroughly under cold water to stop the cooking process and remove excess starch.
- Vanilla coconut cream
- In the same saucepan (rinse well), combine the coconut milk, water, condensed milk and vanilla bean
- Heat the mixture over low heat and put a lid
- When mixture is warm, add tapioca pearls. Stir to combine. cook for 1 min. Turn off heat and place in container.

- •tapioca pearls will thicken coconut mixture as is cools in fridge
- •To prevent tapioca pearls from sticking, make sure there's enough water for them to cook in and rinse them thoroughly after draining.
